1 ¾ cups (200 g) powdered sugar
3 large egg whites, at room temperature
¼ cup (50 g) granulated sugar

1 cup (120 g) powdered sugar
2–3 tablespoons raspberry jam or raspberry buttercream for macarons
½ teaspoon vanilla extract

Melted chocolate or black icing for spider legs

Step 1: Prepare Macaron Shells
Preheat oven to 300°F (150°C) and line two baking sheets with parchment paper.
Sift almond flour and powdered sugar together into a bowl.
In a separate bowl, beat egg whites until foamy. Gradually add granulated sugar and continue to beat until stiff peaks form.
Add black food coloring if desired.
Gently fold almond-sugar mixture into egg whites until smooth and glossy (“macaronage” consistency).
Transfer batter to a piping bag and pipe 1.5-inch circles onto baking sheets. Tap sheets gently to release air bubbles.
Let shells rest 30–60 minutes until a skin forms.
Step 2: Bake Shells
Bake 15–18 minutes, rotating halfway.
Cool completely on baking sheet.
Step 3: Make Filling
Beat butter until creamy.
Add powdered sugar and vanilla extract, mix until smooth.
Incorporate raspberry jam or Biscoff spread until well blended.
Step 4: Assemble Macarons
Pipe filling onto the flat side of half the shells.
Sandwich with remaining shells.
Pipe melted chocolate to create 8 spider legs on each side of the macaron.
Add candy eyes on top for a spooky effect.
