Step 1: Prepare Cake Batter
Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, cream butter and sugar until fluffy. Beat in eggs one at a time, then add vanilla.
Mix in strawberry puree, milk, and sour cream until combined.
Gradually fold in dry ingredients. Add pink food coloring if desired for a brighter strawberry color.
Step 2: Bake
Pour batter into prepared pan. Smooth the top.
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Step 3: Frosting/Glaze (Optional)
Beat cream cheese with powdered sugar and milk until smooth.
