Ingredients

Scale

🛒 Ingredients (Serves 4):

For the Chicken:

  • 4 boneless, skinless chicken breasts

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 2 tablespoons olive oil

For the Smothering:

  • 1 medium onion, thinly sliced

  • 8 oz mushrooms, sliced

  • 2 tablespoons butter

  • 2 cloves garlic, minced

  • 1 cup shredded Jack cheese

  • ½ cup chicken broth

  • ¼ cup heavy cream (optional for extra richness)

  • 1 teaspoon Worcestershire sauce

  • 1 teaspoon dried thyme (optional)

Instructions

📝 Instructions:

Step 1: Prepare Chicken

  1. Preheat oven to 375°F (190°C) if baking.

  2. Season chicken breasts with paprika, garlic powder, onion powder, salt, and pepper.

  3. Heat olive oil in a skillet over medium-high heat. Sear chicken 2–3 minutes per side until golden brown (they don’t need to be fully cooked).

Step 2: Cook Onions & Mushrooms

  1. In the same skillet, melt butter.

  2. Sauté onions and mushrooms for 5–6 minutes until soft and golden.

  3. Add garlic and cook 1 more minute.

Step 3: Smother the Chicken

  1. Reduce heat to medium. Add chicken back to skillet.

  2. Pour in chicken broth, Worcestershire sauce, heavy cream (if using), and thyme.

  3. Top each breast with shredded Jack cheese.

  4. Cover and simmer 10–15 minutes (or bake in oven 20–25 minutes until chicken is cooked through, 165°F internal temperature).

Step 4: Serve

  1. Spoon the onion, mushroom, and cheese mixture over the chicken.

  2. Serve immediately with mashed potatoes, rice, or steamed vegetables.

Notes

  • Slow Cooker Version: Sear chicken first, then combine all ingredients in a slow cooker on low for 3–4 hours.
  • Cheese Swap: Mozzarella or cheddar can replace Jack cheese.
  • Meal Prep: Make ahead and store in airtight containers for up to 3 days; reheat gently to keep chicken moist.
