Step 1: Bake the Cake
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
In a bowl, whisk flour, baking powder, and salt.
In another bowl, beat egg yolks with ¾ cup sugar until pale and thick. Stir in milk and vanilla.
In a separate bowl, beat egg whites until soft peaks form, then gradually add remaining ¼ cup sugar and beat until stiff peaks form.
Gently fold egg whites into the yolk mixture, then fold in dry ingredients until just combined.
Pour batter into the prepared dish and bake for 25–30 minutes, until a toothpick inserted comes out clean. Let cool completely.
Step 2: Soak with Milk
In a bowl, whisk together evaporated milk, condensed milk, and heavy cream.
Poke holes all over the cooled cake using a fork. Slowly pour the milk mixture evenly over the cake. Refrigerate for at least 2–4 hours, preferably overnight.
Step 3: Add Topping
Whip heavy cream, powdered sugar, and vanilla until soft peaks form.
Spread evenly over the chilled cake.
Step 4: Garnish and Serve
Top with fresh fruit, a sprinkle of cinnamon, or coconut if desired. Serve cold.
