Description

For the Shrimp & Sauce:

1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
1 tablespoon butter
4 cloves garlic, minced
1 cup cherry tomatoes, halved
1 cup heavy cream (or coconut milk for dairy-free)
½ cup chicken broth
½ cup grated Parmesan cheese
1 teaspoon Italian seasoning
½ teaspoon paprika
Salt & black pepper, to taste
2 cups fresh spinach
Optional: red pepper flakes for heat


Instructions

Step 1: Cook the Shrimp
Heat olive oil and butter in a large skillet over medium heat.
Season shrimp with salt, pepper, and paprika.
Sauté shrimp for 1–2 minutes per side until pink and just cooked. Remove and set aside.

Step 2: Make the Tuscan Sauce
In the same skillet, add garlic and sauté for 30 seconds until fragrant.
Add cherry tomatoes and cook 2–3 minutes until softened.
Pour in chicken broth and heavy cream. Stir well.

Step 3: Add Creaminess
Mix in Parmesan cheese and Italian seasoning.
Simmer for 3–5 minutes until sauce thickens slightly.

 

Step 4: Finish the Dish
Stir in spinach until wilted.
Return shrimp to the pan and simmer 2–3 minutes.
Taste and adjust seasoning. Add red pepper flakes if desired.

Pasta Option: Serve over fettuccine for a creamy Tuscan shrimp pasta
