Description

A soft, fluffy, and slightly sweet bread infused with ube (purple yam) puree, giving it a beautiful purple hue and a subtle earthy flavor. Perfect for sandwiches, toasts, or enjoyed on its own. Can be made with yeast for traditional texture or in a bread machine for convenience.


Ingredients

For the Dough:
3 ½ cups bread flour
¼ cup granulated sugar
1 teaspoon salt
2 teaspoons instant yeast
½ cup whole milk, warm
½ cup ube halaya or cooked ube puree
1 large egg
4 tablespoons unsalted butter, softened

Optional Filling:
¼ cup ube halaya for a swirl or filled bread

Step 1: Prepare Dough
In a mixing bowl, combine warm milk, yeast, and a pinch of sugar. Let it sit 5–10 minutes until foamy.

In a large bowl, mix bread flour, sugar, and salt. Add ube puree and egg, then pour in the yeast mixture. Mix until a dough forms.

Knead in softened butter until the dough is smooth and elastic (about 10 minutes by hand or 6–8 minutes with a stand mixer).

Step 2: First Proof
Place dough in a lightly greased bowl. Cover with a cloth or plastic wrap and let it rise in a warm place for 1–2 hours, until doubled in size.

Step 3: Shape the Loaf
Punch down the dough. Roll it into a rectangle, optionally spread with ube halaya for filling, and roll it into a log. Place in a greased loaf pan.

Step 4: Second Proof
Cover and let it rise for another 45–60 minutes until doubled. Preheat oven to 350°F (175°C) during this time.

Step 5: Bake
Brush the top with milk or egg wash for a shiny crust. Bake for 30–35 minutes, until the top is golden and the loaf sounds hollow when tapped.

Step 6: Cool and Serve
Remove from the pan and cool completely on a wire rack before slicing.

Notes

  • For a richer flavor, replace part of the milk with coconut milk.
  • For a swirl effect, gently fold ube halaya into the dough instead of fully rolling.
  • Bread machine users can follow the “milk bread” or “soft bread” cycle, adding ingredients in the order recommended by the manufacturer.
