For the Crust:

  • 1 cup graham cracker crumbs

  • 2 tablespoons granulated sugar

  • 3 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz (2 packages) cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • ½ cup heavy cream

  • 1 teaspoon vanilla extract

  • Seeds from 1 vanilla bean (or 1 teaspoon vanilla bean paste)

For the Caramelized Topping:

  • 23 tablespoons granulated sugar

Step 1: Prepare Crust

  1. Preheat oven to 325°F (160°C). Line a 12-cup muffin tin with cupcake liners.

  2. Mix graham cracker crumbs, sugar, and melted butter until combined.

  3. Press 1–2 tablespoons of the mixture into the bottom of each liner. Bake for 5–7 minutes, then cool slightly.


Step 2: Make Cheesecake Filling

  1. In a bowl, beat cream cheese and sugar until smooth.

  2. Add eggs one at a time, beating gently after each addition.

  3. Mix in heavy cream, vanilla extract, and vanilla bean seeds until fully incorporated.


Step 3: Assemble & Bake

  1. Pour cheesecake filling over the prepared crusts, filling almost to the top of each liner.

  2. Bake 20–25 minutes, until edges are set and centers slightly jiggle.

  3. Cool to room temperature, then refrigerate at least 2 hours or overnight for best texture.


Step 4: Caramelize the Tops

 

  1. Sprinkle ~1 teaspoon sugar evenly on top of each cupcake.

  2. Using a kitchen torch, carefully melt and caramelize the sugar until golden brown.
    (Alternatively, broil in the oven for 1–2 minutes, watching closely.)

  3. Let the sugar harden for a few minutes before serving.
