Instructions
📝 Instructions:
Step 1: Prep the Okra
Wash and dry the okra thoroughly. Slice into ½-inch rounds. The drier the okra, the crispier it will fry.
Step 2: Mix the Coating
In a shallow bowl, combine flour, cornmeal, smoked paprika, garlic powder, onion powder, cayenne (if using), salt, and black pepper.
Step 3: Coat the Okra
Pour plant-based milk into a separate bowl. Dip each okra piece in milk, then dredge in the seasoned flour/cornmeal mixture, pressing lightly to adhere.
Step 4: Cook the Okra
Air Fryer: Preheat to 400°F (200°C). Place okra in a single layer, spray lightly with oil, and air fry for 10–12 minutes, shaking halfway.
Pan Fry: Heat 1–2 tablespoons oil in a skillet over medium heat. Fry okra in batches, 3–4 minutes per side, until golden and crispy. Drain on paper towels.
Oven Bake: Preheat oven to 425°F (220°C). Spread okra on a lined baking sheet, spray lightly with oil, bake 15–20 minutes, flipping halfway.
Step 5: Serve
Sprinkle with extra salt if desired and serve warm with lemon wedges or a vegan dipping sauce.
Notes
- Crispier Okra: Let sliced okra sit on paper towels for 10 minutes before coating to remove excess moisture.
- Mississippi Vegan Style: Add a pinch of Old Bay seasoning or Cajun spice to the coating for authentic Southern flavor.
- Make Ahead: Okra can be prepped and coated a few hours ahead; fry just before serving for maximum crispiness.
