For the Dough:
2 cups all-purpose flour
1 tsp instant yeast
1 tsp sugar
½ tsp salt
¾ cup warm water
2 tbsp olive oil
For the Zaatar Topping:
4 tbsp zaatar spice mix
3 tbsp olive oil
Optional Cheese Variation:
½ cup akkawi, mozzarella, or feta cheese, crumbled or shredded

Step 1: Prepare the Dough
In a small bowl, mix yeast, sugar, and warm water. Let sit 5–10 minutes until foamy.
In a large bowl, combine flour and salt. Add yeast mixture and olive oil. Knead 5–7 minutes until smooth and elastic.
Cover with a clean cloth and let rise for 1 hour, until doubled in size.
Step 2: Prepare Zaatar Topping
Mix zaatar spice with olive oil in a small bowl until it forms a spreadable paste.
Step 3: Shape the Manakeesh
Preheat oven to 450°F (230°C).
Divide dough into 4 balls. Roll each into a 6–7 inch circle on a lightly floured surface.
Spread zaatar mixture evenly over the dough. Add cheese on top if desired.
Step 4: Bake
Place on a baking sheet lined with parchment paper.
Bake for 8–12 minutes until the edges are golden and crisp.
Step 5: Serve
Serve warm with fresh vegetables, olives, or yogurt on the side.
