Description

This moist and aromatic Apple Cinnamon Skillet Cake is the ultimate cozy treat. Perfectly balancing fresh, crisp apples with warming cinnamon, this one-pot dessert is designed for busy schedules without compromising on decadent flavor. The cast-iron skillet helps create beautifully caramelized edges while keeping the center tender and soft, making it a reliable crowd-pleaser for any occasion.

Ingredients

Scale

2 1/2 cups all-purpose flour
2 cups diced Honeycrisp or Granny Smith apples
1 cup unsweetened applesauce
3/4 cup light brown sugar, packed
3/4 cup granulated cane sugar
1/2 cup chopped pecans, toasted
2 flax eggs (2 tbsp flax meal mixed with 6 tbsp water)
2 tablespoons ground cinnamon
1/2 teaspoon baking soda
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
1 teaspoon pure vanilla extract

Instructions

Preheat your oven to 350ºF.
Combine flax meal and water in a small bowl, stir, and refrigerate for 10 minutes to thicken.
Toast chopped pecans in the skillet over medium heat for 3 minutes until fragrant, then remove.
In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
In a separate bowl, cream together the sugars, applesauce, vanilla, and prepared flax eggs.
Fold the dry ingredients into the wet mixture until just combined.
Fold in the diced apples and toasted pecans.
Transfer the batter into the greased cast-iron skillet and smooth the top.
Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool slightly before slicing.

Notes

Ensure your apples are diced into uniform pieces to ensure even baking. You can substitute the all-purpose flour with a high-quality gluten-free baking blend if needed. Store any leftovers in an airtight container at room temperature for up to 3 days.
