Description
A warm, rustic dessert featuring beautifully caramelized Honeycrisp or Granny Smith apples tucked into a tender, spiced crumb. This one-skillet wonder uses the superior heat retention of cast iron to ensure a moist, flavorful cake that is perfect for cozy weeknights or elegant brunch gatherings. Utilizing pantry staples like dark brown sugar and aromatic spices, this recipe offers a sophisticated, comforting experience without hours in the kitchen.
Ingredients
2 large Honeycrisp or Granny Smith apples, peeled and diced
9 tbsp butter, softened and divided
2 cups dark brown sugar, divided
1 2/3 cups all-purpose flour
3 large eggs, room temperature
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 pinch salt
Instructions
Peel, core, and dice the apples into uniform pieces.
In a skillet, combine diced apples with a portion of the brown sugar and salt.
Cook over medium heat until sugar dissolves, then reduce to medium-low until fruit softens, about 7-9 minutes.
Remove apple mixture from heat and let cool to room temperature.
Preheat oven to 350 degrees Fahrenheit.
Grease a cast-iron skillet thoroughly with butter.
Cream the remaining butter and dark brown sugar in a mixer until light and fluffy.
Whisk in the eggs one at a time, followed by the flour, cinnamon, and nutmeg.
Fold in the cooled apple mixture and spread batter into the prepared skillet.
Bake for 45-50 minutes or until a tester comes out clean.
Notes
Ensure apples are cooled completely before adding to the batter to prevent the butter from melting prematurely. The nutmeg is optional but highly recommended for depth of flavor. Store leftovers in an airtight container at room temperature for up to 3 days.
