Ingredients
2 cups white whole wheat or gluten-free flour blend
1/2 teaspoon ground cinnamon
1 1/2 teaspoons baking soda
1/2 teaspoon kosher salt
3 medium ripe bananas, very brown and spotted
1/2 cup Greek yogurt, vanilla or plain
1/3 cup pure maple syrup
1 teaspoon pure vanilla extract
1 tablespoon coconut oil, melted and cooled
1 large egg, room temperature
Instructions
Preheat your oven to 350º F.
Grease an 8-inch square baking pan with cooking spray.
In a large bowl, whisk together the flour, cinnamon, baking soda, and salt.
In a high-speed blender, combine the bananas, Greek yogurt, maple syrup, vanilla, oil, and egg.
Blend the mixture for one minute until completely smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Transfer the batter to the prepared pan.
Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool before slicing and serving.
