Ingredients
2/3 cup vegetable oil
2 large eggs
1.5 tbsp lemon zest
1/4 cup fresh lemon juice
1 cup plain Greek yogurt
1.25 cups caster sugar
2 cups plain flour
4 tsp baking powder
1 pinch salt
Instructions
Preheat your oven to 350F (180C) or 320F (160C) for fan-assisted ovens.
Grease an 8-inch cake pan thoroughly to prevent sticking.
In a large bowl, whisk together the vegetable oil, eggs, lemon zest, lemon juice, yogurt, and caster sugar until smooth.
Sift in the flour, baking powder, and salt.
Fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
Pour the batter into the prepared cake pan.
Bake for 50 minutes or until a skewer inserted into the center comes out clean.
Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
