Ingredients
1 (15 oz) can pure pumpkin purée
2 large eggs, room temperature
2 tablespoons vegetable oil (or melted coconut oil)
1/2 cup packed brown sugar
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon pumpkin pie spice
1/4 cup flour (for streusel)
1/4 cup white granulated sugar (for streusel)
1 teaspoon cinnamon (for streusel)
1/4 cup softened butter (for streusel)
1/2 cup chopped walnuts or pecans (optional)
Instructions
Preheat your oven to 350 F.
Butter and flour an 8×8 or 9×9 inch square baking pan.
In a large bowl, whisk together the pumpkin purée, eggs, oil, brown sugar, and vanilla until smooth.
In a separate bowl, mix the flour, baking powder, baking soda, salt, and pumpkin pie spice.
Fold the dry ingredients into the wet mixture until just combined, do not overmix.
Pour the batter into the prepared baking pan and spread evenly.
In a small bowl, combine the streusel ingredients (flour, sugar, cinnamon, butter, and nuts) using a fork or your fingers until crumbly.
Sprinkle the streusel mixture evenly over the cake batter.
Bake for 20-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool slightly before slicing and serving.
Notes
Use 100% pure canned pumpkin, not pumpkin pie filling which contains added sugars. You can substitute all-purpose flour with whole wheat pastry flour for a denser, more fiber-rich cake. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.
