Ingredients
3 tbsp cake flour
2 tbsp granulated sugar
1/4 tsp baking powder
1 pinch salt
3 tbsp milk
1/2 tsp vanilla extract
3 tbsp unsalted butter, melted and slightly cooled
3–4 fresh strawberries, diced
Instructions
Combine the flour, sugar, baking powder, and salt in a microwave-safe mug.
Whisk the dry ingredients with a fork until no lumps remain.
Pour the melted butter, milk, and vanilla extract into the mug.
Stir the batter with a tablespoon until the consistency is smooth and uniform.
Gently fold the diced strawberries into the batter.
Microwave on high power for 60 to 90 seconds until the center appears firm.
Remove carefully from the microwave and let it stand for one minute before serving.
Notes
You can substitute all-purpose flour for cake flour. Ensure the butter is melted but not piping hot before adding to the batter. Dairy or almond milk both work well in this recipe.
