1/2 cup butter, softened
1/2 cup white sugar
1/4 cup brown sugar
2 eggs, room temperature
1 tbsp vanilla extract
1 cup pumpkin puree
1 1/4 cups all-purpose flour
1 cup rolled oats
1 tsp cinnamon
1/2 tsp baking soda
1 1/2 tsp baking powder


Instructions

Preheat your oven to 350℉ (180℃).
Line your baking pan with parchment paper on the bottom and two sides, and grease the remaining sides.
In a medium bowl, whisk together flour, rolled oats, baking soda, baking powder, and cinnamon.
In a large bowl, cream the softened butter, white sugar, and brown sugar for three minutes until light and fluffy.
Add the eggs one at a time, followed by the vanilla extract and pumpkin puree, mixing until smooth.
Gradually fold the dry oat mixture into the wet ingredients until just combined.
Pour the batter into the prepared pan and bake for 45 minutes, or until a toothpick comes out clean.
Allow to cool slightly before serving.
