For the Cake
- 1 cup (175 g) chopped pitted dates
- 1 cup (240 ml) boiling water
- 1 teaspoon baking soda
- ½ cup (115 g) unsalted butter, softened
- ¾ cup (150 g) brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1¾ cups (220 g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 cup (100 g) chopped walnuts
Optional Walnut Glaze
- 1 cup (120 g) powdered sugar
- 2–3 tablespoons milk
- ¼ teaspoon vanilla extract
- 2 tablespoons finely chopped walnuts
Instructions
1. Prepare the Dates
- Place the chopped dates in a bowl.
- Pour the boiling water over them and stir in the baking soda.
- Let stand for 15 minutes until softened and slightly cooled.
2. Make the Cake Batter
- Preheat the oven to 350°F (175°C).
- Grease and line an 8-inch (20 cm) round cake pan or loaf pan.
- In a large bowl, cream together the butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla extract.
- In another bowl, whisk together the flour, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the butter mixture.
- Stir in the softened dates along with their soaking liquid.
- Fold in the chopped walnuts.
3. Bake
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35–45 minutes, or until a toothpick inserted into the center comes out clean.
