For the Cake

  • 1 cup (175 g) chopped pitted dates
  • 1 cup (240 ml) boiling water
  • 1 teaspoon baking soda
  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup (150 g) brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1¾ cups (220 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup (100 g) chopped walnuts

Optional Walnut Glaze

  •  1 cup (120 g) powdered sugar
  • 23 tablespoons milk
  • ¼ teaspoon vanilla extract
  • 2 tablespoons finely chopped walnuts

Instructions

1. Prepare the Dates

  1. Place the chopped dates in a bowl.
  2. Pour the boiling water over them and stir in the baking soda.
  3. Let stand for 15 minutes until softened and slightly cooled.

2. Make the Cake Batter

  1. Preheat the oven to 350°F (175°C).
  2. Grease and line an 8-inch (20 cm) round cake pan or loaf pan.
  3. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, cinnamon, and salt.
  6. Gradually add the dry ingredients to the butter mixture.
  7. Stir in the softened dates along with their soaking liquid.
  8. Fold in the chopped walnuts.

3. Bake

  1. Pour the batter into the prepared pan and smooth the top.
  2. Bake for 35–45 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

4. Make the Optional Glaze

  1.  Whisk together the powdered sugar, milk, and vanilla until smooth.
  2. Drizzle over the cooled cake.
  3. Sprinkle with chopped walnuts.

Notes

  • Serve warm with a dollop of whipped cream.
