Ingredients
3 medium Red Apples (Pink Lady or Honeycrisp)
100g (7 tbsp) Unsalted Butter, softened
3/4 cup Caster Sugar
3 Large Eggs, room temperature
1 tsp Pure Vanilla Extract
1 1/3 cups All-Purpose Flour
1 1/4 tsp Baking Powder
1/4 tsp Cooking Salt
Instructions
Preheat your oven to 180°C/350°F (160°C fan-forced).
Butter a 23cm/9 inch round cake pan and line the base with parchment paper.
In a bowl, whisk together the flour, baking powder, and salt.
Beat the softened butter on medium speed for 1 minute until creamy.
Add the sugar to the butter and beat for another minute until the mixture is pale and fluffy.
Mix in the eggs one at a time, ensuring each is fully incorporated before adding the next.
Stir in the vanilla extract.
Fold in the dry ingredients until just combined.
Peel, core, and chop the apples into bite-sized pieces and fold them into the batter.
Pour the batter into the prepared pan and smooth the top.
Bake for 35-45 minutes or until a skewer inserted into the center comes out clean.
Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
