Ingredients
325g all-purpose flour
8 tbsp unsalted butter, ice cold
1/2 cup vegetable shortening, cubed
2 cups pure apple cider
6 cups Honeycrisp apples, peeled and sliced
2/3 cup granulated sugar
1.5 tsp cinnamon and pie spice blend
6 tbsp ice water
1/4 tsp salt
Instructions
Pulse flour, salt, sugar, shortening, and butter in a food processor until coarse crumbs form.
Add ice water gradually and pulse until dough holds together.
Divide dough into two disks, wrap in plastic, and refrigerate for at least 1 hour.
Place cider in a saucepan and boil over high heat until reduced to 1/2 cup of syrup.
Allow the cider reduction to cool completely.
Combine the sliced apples, sugar, spices, and the cooled cider syrup in a bowl.
Roll out chilled dough disks on a floured surface.
Place bottom crust into a pie dish, fill with apple mixture, and cover with the top crust.
Seal the edges and cut slits for steam to escape.
Bake at 375°F (190°C) until the crust is golden brown and the filling is bubbly.
Notes
Ensure the apple cider is pure juice with no additives to achieve the proper consistency during reduction. The butter and shortening must be kept very cold to ensure the crust remains flaky. You can brush the top crust with a little egg wash or milk for a golden finish.
