8 tbsp unsalted butter, ice cold
1/2 cup vegetable shortening, cubed
2 cups pure apple cider
6 cups Honeycrisp apples, peeled and sliced
2/3 cup granulated sugar
1.5 tsp cinnamon and pie spice blend
6 tbsp ice water
1/4 tsp salt


Instructions

Pulse flour, salt, sugar, shortening, and butter in a food processor until coarse crumbs form.
Add ice water gradually and pulse until dough holds together.
Divide dough into two disks, wrap in plastic, and refrigerate for at least 1 hour.
Place cider in a saucepan and boil over high heat until reduced to 1/2 cup of syrup.
Allow the cider reduction to cool completely.
Combine the sliced apples, sugar, spices, and the cooled cider syrup in a bowl.
Roll out chilled dough disks on a floured surface.
Place bottom crust into a pie dish, fill with apple mixture, and cover with the top crust.
Seal the edges and cut slits for steam to escape.

Notes
