Ingredients
210 grams plain all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
150 grams caster sugar
1 cup red apple, peeled and roughly chopped
2 large eggs, room temperature
1 tsp vanilla extract
120 ml vegetable oil
120 ml full-fat Greek yogurt
Instructions
Preheat your oven to 180 C (350 F) for conventional or 160 C (320 F) for fan-forced ovens.
Grease and line an 8-inch round cake pan with parchment paper.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and caster sugar.
Add the chopped apple pieces to the dry mixture and stir to coat the fruit.
In a separate bowl, whisk together the eggs, vanilla extract, vegetable oil, and Greek yogurt until smooth.
Pour the wet ingredients into the dry ingredients and fold until just combined.
Transfer the batter into the prepared cake pan and spread evenly.
