Ingredients

Scale

2 1/2 cups all-purpose flour (divided)
1 large apple (Granny Smith or Honeycrisp), diced
8 tbsp unsalted butter, melted (divided)
3 tsp ground cinnamon
1 1/4 cups sugar (combined granulated and light brown)
2 large eggs, room temperature
1/2 cup milk (whole or 2%)
1/4 cup vegetable oil
1 tbsp baking powder
1/2 tsp salt
1 tsp vanilla extract

Instructions

Preheat your oven to 375°F and line a 12-cup muffin pan.
For the topping: Combine 4 tbsp melted butter, 1/2 cup flour, 1/4 cup granulated sugar, 1/4 cup brown sugar, 1 tsp cinnamon, and a pinch of salt in a bowl until crumbly; set aside.
In a medium bowl, whisk together 2 cups flour, baking powder, and 2 tsp cinnamon.
In a large bowl, whisk together 4 tbsp melted butter, 3/4 cup sugar, vegetable oil, and salt.
Add the milk, eggs, and vanilla extract to the wet ingredients and whisk until smooth.
Fold the dry flour mixture and the diced apples into the wet ingredients until just combined.
Divide the batter evenly into the 12 muffin wells.
Sprinkle the prepared crumb topping evenly over the batter in each well.
Bake for 22 to 25 minutes or until a toothpick inserted into the center comes out clean.

Notes

Store in an airtight container at room temperature for up to 3 days. Use room temperature eggs for better incorporation into the batter. For a crunchier topping, ensure the butter for the crumb is slightly cooled before mixing.
