Description
A tender, buttery coffee cake studded with tart green apple slices and topped with a crunchy cinnamon-brown sugar streusel. Perfect for fall mornings or simple desserts.
Ingredients
2 cups all-purpose flour (280g)
2 teaspoons baking powder
1 teaspoon salt
1/4 cup granulated sugar (50g) plus 2 tablespoons
1 teaspoon cinnamon plus 1/4 teaspoon
10 tablespoons unsalted butter (140g) softened
2 large eggs
1 cup milk (235ml)
1 medium tart green apple (e.g. Granny Smith) sliced into 1/4″ pieces
4 tablespoons brown sugar
Instructions
Preheat oven to 350°F (175°C). Grease a 9″ square or pie dish
Whisk 2 cups flour, 2 tsp baking powder, and 1 tsp salt until smooth
Combine 2 tbsp sugar and 1 tsp cinnamon; set aside for apples
Mix 1/4 cup sugar, softened butter, eggs, and milk until just combined
Fold in apple slices
Press batter into dish, 1/4″ thick with even distribution
Sprinkle 1 tsp cinnamon-sugar mix into batter
Spread streusel topping (brown sugar, 2 tbsp flour, and 1/4 tsp cinnamon) over batter
Bake 30-35 minutes until golden and crumbs golden brown
Notes
Gluten-free: Substitute 280g gluten-free flour blend
For crisper streusel, refrigerate shaped apple slices 10 minutes before baking
Rotate dish halfway through baking if using glassware
