These apple crumble bars are the ultimate sweet treat, featuring a sturdy, buttery shortbread base topped with a tender, spiced Granny Smith apple filling and a crunchy oat-topped crust. 125g unsalted butter, melted
2.25 cups all-purpose flour
0.75 cups white sugar
1/3 cup rolled oats
4 cups Granny Smith apples, peeled and finely diced
0.5 tsp ground cinnamon
0.25 tsp ground nutmeg
1 tsp baking powder
0.5 tsp salt
1 large egg


Instructions

Preheat your oven to 180°C (350°F) and grease a 20cm square pan.
Line the pan with baking paper, leaving an overhang for easy removal.
In a large bowl, whisk together 2 cups of flour, 1/2 cup sugar, baking powder, and salt.
Add the melted butter and the egg to the dry mixture and stir until a crumbly dough forms.
Press two-thirds of the dough firmly into the prepared pan to form the base.
Bake the base for 15 minutes, then remove from the oven and cool slightly.
In a separate bowl, toss the diced apples with the remaining 1/4 cup flour, 1/4 cup sugar, cinnamon, and nutmeg.
Spread the apple mixture evenly over the pre-baked base.
Add the oats to the remaining dough, combine well, and crumble this mixture over the top of the apples.
Bake for an additional 35 minutes or until the top is golden brown and the fruit is tender.

Notes

Ensure apples are diced small to ensure they cook through evenly. For an extra crunch, you can toast the oats in a dry pan for 2 minutes before adding them to the topping. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.
