Ingredients
1/2 cup unsalted butter, softened
1 3/4 cups granulated white sugar
2 large eggs, room temperature
1 cup unsweetened applesauce
2 cups fresh apples, grated or finely diced
2 1/4 cups all-purpose flour
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
1 1/2 tsp baking soda
1/4 tsp baking powder
1 tsp fine sea salt
Instructions
Preheat your oven to 375 degrees F.
Grease a 9×13 inch metal pan with butter or cooking spray.
In a medium bowl, whisk together the flour, cinnamon, nutmeg, cloves, baking soda, baking powder, and salt.
In a large stand mixer, cream the softened butter and sugar for 2-3 minutes until pale and fluffy.
Add the eggs to the butter mixture one at a time, beating well after each addition.
Stir in the applesauce and the grated apples until combined.
Gradually add the dry ingredients into the wet mixture until just incorporated.
Pour the batter into the prepared pan and spread evenly.
Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pan before slicing and serving.
Notes
You can use a gluten-free 1:1 baking flour blend as a direct substitute. For a more sophisticated finish, serve warm with a drizzle of caramel sauce or a scoop of vanilla bean ice cream. Store in an airtight container at room temperature for up to three days.
