Ingredients
3 medium ripe bananas
8 Tbsp unsalted butter, room temperature
3/4 cup granulated sugar
2 large eggs, lightly beaten
1 1/2 cups all-purpose flour, sifted
1 tsp baking soda
1/2 tsp sea salt
1/2 tsp pure vanilla extract
1 cup walnuts, coarsely chopped
1/2 cup sun-dried raisins
Instructions
Preheat your oven to 350°F (175°C).
Grease and flour a 9.25 x 5.25 x 2.75 inch loaf pan.
Roast the walnuts in a dry skillet over medium heat until fragrant, then let cool and chop coarsely.
Cream the softened butter and sugar in a large bowl until smooth and fluffy.
Mash the bananas to a chunky consistency and add to the butter mixture.
Stir in the beaten eggs and vanilla extract.
Fold in the sifted flour, baking soda, and salt until just combined.
Fold in the toasted walnuts and raisins.
Pour the batter into the prepared loaf pan.
Bake for 60 minutes or until a tester inserted into the center comes out clean.
Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Ensure bananas have black-spotted peels for maximum sweetness and moisture. Honey can be used as a substitute for granulated sugar. Let the loaf cool completely before slicing for the cleanest cut.
