Description

A quintessential comfort dessert that boasts an incredibly moist, tender crumb and a rich, caramelized fruit flavor. This banana cake uses sour cream and brown sugar to ensure a deep, complex sweetness and a delicate texture that stays fresh for days. It is a reliable, crowd-pleasing treat perfect for any occasion, offering professional, bakery-quality results from your own home kitchen.

Ingredients

Scale

250g all-purpose flour
5g baking soda
4g baking powder
3g fine salt
3g ground cinnamon
115g unsalted butter, softened
150g granulated sugar
75g light brown sugar, packed
2 large eggs, room temperature
300g ripe bananas, mashed
120g sour cream, room temperature
10ml pure vanilla extract
60ml whole milk

Instructions

Preheat your oven to 175°C (350°F) and grease a 23 x 33 cm (9 x 13-inch) baking pan, lining the bottom with parchment paper.
Whisk the flour, baking soda, baking powder, salt, and cinnamon together in a medium bowl.
In a separate large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
Stir in the mashed bananas.
Alternately add the dry ingredient mixture and the sour cream/milk mixture to the wet ingredients, starting and ending with dry, mixing until just combined.
Pour the batter into the prepared pan and smooth the top.
Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
Cool completely in the pan before serving or frosting.

Notes

Ensure ingredients like eggs and sour cream are at room temperature to achieve proper emulsification. Do not overmix the batter once the flour is added to maintain a delicate crumb. This cake pairs excellently with tangy cream cheese frosting.
