1/4 cup Greek yogurt
1/2 cup packed brown sugar
1 large egg, room temperature
1 tsp pure vanilla extract
2.5 cups all-purpose flour
2.5 tsp baking powder

1/8 tsp freshly grated nutmeg
0.5 tsp fine sea salt
5 tbsp unsalted butter, frozen
1 cup coarsely chopped walnuts


Instructions

Preheat your oven to 400°F (204°C) and line two large baking sheets with parchment paper.
In a bowl, beat together the mashed bananas, Greek yogurt, brown sugar, egg, and vanilla extract until smooth.
In a separate large bowl, whisk the flour, baking powder, cinnamon, nutmeg, and salt.
Using a box grater, grate the frozen butter directly into the flour mixture, tossing gently to coat.
Add the wet mixture to the dry ingredients and stir until just combined.
Fold in the chopped walnuts.
Turn the dough onto a floured surface, shape into discs, and cut into 10 wedges.

Notes
