Ingredients
Chicken (4 lbs) – Thighs, drumsticks, or breasts. Boneless or bone-in; skin-on yields juicier results.
Oil – 1-2 tbsp – Olive oil or vegetable oil. Use a high smoke point oil for grilling.
Seasoning – To taste – Salt, black pepper, garlic powder, onion powder, and paprika.
BBQ Sauce – 1 cup – Use a halal-certified or alcohol-free recipe, or your preferred store-bought variety.
Instructions
Preheat grill to high heat (500°F) for 10-15 minutes and clean the grates.
Set up a two-zone fire (or turn off one burner on a gas grill) to create a searing zone and an indirect zone.
Generously drizzle oil over chicken pieces and rub on a blend of salt, pepper, garlic powder, onion powder, and paprika.
Place chicken skin-side down on the high-heat zone to sear for 5 minutes, then flip and cook for 5 minutes more.
Move to the cooler (indirect) zone, baste with BBQ sauce, and grill for 15-20 minutes until chicken is tender and sauce is caramelized.
Brush additional sauce 1-2 more times as it cooks for deeper flavor.
Use a water spray bottle to manage flare-ups during the process.
Rest grilled chicken for 5 minutes before serving to ensure juiciness.
