2 pounds sweet potatoes, cubed into ½-inch pieces
Salt and pepper, to taste
pounds chicken breasts or thighs, boneless skinless
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
½ cup BBQ sauce (plus extra, optional)
1 tablespoon Worcestershire sauce
Mozzarella cheese slices


Instructions

Preheat oven to 425°F (220°C)
Line a rimmed baking sheet with parchment paper
In a large bowl, toss sweet potatoes with 1 tablespoon olive oil and season with salt and pepper
Spread sweet potatoes on the prepared baking sheet and roast for 20 minutes, until tender and golden brown
Meanwhile, season chicken with smoked paprika, garlic powder, onion powder, salt, and pepper
Heat the remaining 1 tablespoon olive oil in an oven-safe skillet or large oven-safe Dutch oven on the stovetop over medium-high heat
Sear chicken for 2-3 minutes on each side, until browned
Add BBQ sauce and Worcestershire sauce to the skillet, along with the roasted sweet potatoes
Place mozzarella cheese slices on top of the chicken and potatoes
Transfer the skillet to the oven and bake for 10 minutes to meld the flavors and allow the cheese to begin melting
Switch the oven to broil and cook for an additional 2-3 minutes, until the cheese is golden and bubbly
Let rest for 5 minutes before serving

Ensure your BBQ sauce is gluten-free if needed
If using pre-cooked chicken, simply sear for 1 minute per side before adding the sauce and sweet potatoes
You can substitute regular mozzarella for fresh mozzarella, or other cheeses like cheddar or pepper jack
