Ingredients
1 ½ cups all-purpose flour
½ cup + 1 Tbsp granulated sugar
2 tsp baking powder
½ tsp salt
¾ cup milk
¼ cup vegetable oil
1 large egg
½ tsp vanilla extract
1 ½ cups blueberries
Instructions
Preheat oven to 350°F (175°C). Grease an 8 1/2 x 4 1/2 loaf pan with oil, then dust with flour to prevent sticking.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In a separate bowl, mix milk, vegetable oil, egg, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir just until combined. Fold in blueberries gently.
Transfer batter to the prepared loaf pan. Sprinkle a thin layer of sugar on top.
Bake for 65 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For a gluten-free option, substitute all-purpose flour with a 1:1 baking flour blend.
Frozen blueberries work well without thawing; there may be slight bleeding into the batter as the recipe ensures even blueberry distribution.
For vegan version, use flax egg: 1 Tbsp ground flax + 3 Tbsp water.
Store in an airtight container for up to 3 days, or freeze for up to 2 months.
