Description

This moist and tender blueberry almond cake is a delightful treat that perfectly balances nutty richness with a bright, acidic burst of fresh blueberries. Made with a combination of all-purpose and almond flour and enriched with tangy buttermilk, this easy-to-bake cake is perfect for a cozy weeknight dessert or a special weekend celebration. Topped with crunchy sliced almonds, it is a family-friendly classic that stays soft for days.

Ingredients

Scale

1 3/4 cups all-purpose flour
1/2 cup finely ground almond flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs, room temperature
1 tsp vanilla extract
1 tsp almond extract
3/4 cup buttermilk, room temperature
1 1/2 cups blueberries, fresh or frozen
1/3 cup sliced almonds

Instructions

Preheat your oven to 350°F and grease a 9-inch springform or round cake pan, lining the bottom with parchment paper.
Whisk together the all-purpose flour, almond flour, baking powder, and salt in a medium bowl.
Beat the softened butter and sugar in a large bowl until the mixture is pale and fluffy, about 3 minutes.
Add the eggs one at a time, followed by the vanilla and almond extracts, beating well after each addition.
Alternate adding the dry ingredients and the buttermilk into the butter mixture in three additions, starting and ending with the dry ingredients.
Gently fold in the fresh or frozen blueberries.
Pour the batter into the prepared cake pan and smooth the top.
Sprinkle the sliced almonds evenly over the top of the batter.
Bake for 55 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Ensure all ingredients are at room temperature for the best batter emulsion. If using frozen blueberries, toss them in a tablespoon of flour before folding to prevent them from sinking to the bottom. Serve with a light dusting of powdered sugar or a simple lemon glaze if desired.
