Ingredients

1 cup cottage cheese (full or low-fat)
2 large eggs
½ cup rolled oats (use gluten-free if needed)
¼ cup honey or maple syrup
1 tsp vanilla extract
1 tsp baking powder
½ tsp cinnamon
¼ tsp salt
1 cup fresh or thawed blueberries
Optional: lemon zest


Instructions

Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
Whisk cottage cheese until smooth; add eggs and a pinch of salt, blending well.
Stir in honey/maple syrup, vanilla, oats, baking powder, cinnamon, and salt.
Gently fold in blueberries (and lemon zest if using).
