4 cups (600 g) blueberries (fresh or frozen, do not thaw if frozen)
1/2 cup (100 g) granulated sugar (for berries)
1 teaspoon (2 g) lemon zest
6 Tablespoons (85 g) butter
1 cup (120 g) all-purpose flour
1 cup (200 g) granulated sugar (for batter)
1 Tablespoon (15 g) baking powder
1/2 teaspoon (3 g) salt
1 cup (240 ml) milk
1 teaspoon (5 ml) vanilla extract


Instructions

Preheat your oven to 375°F (190°C).
In a medium bowl, toss the blueberries with 1/2 cup sugar and lemon zest. Set aside.
In a 9×13 inch baking dish, melt the 6 tablespoons of butter in the preheated oven for about 5 minutes.
While the butter is melting, whisk together the flour, 1 cup sugar, baking powder, and salt in a separate bowl.
Add the milk and vanilla extract to the dry ingredients and whisk until just combined to form a thick batter.
Carefully remove the hot baking dish from the oven. Pour the batter evenly over the melted butter.
Spoon the prepared blueberry mixture over the batter, spreading it out gently.
Bake for 35-40 minutes, or until the topping is golden brown and the blueberries are bubbling.
Let cool slightly before serving.

Notes

Serve warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream.
Feel free to adjust the sugar for the berries based on their sweetness.
This recipe is very forgiving and can also be made with other berries like raspberries or blackberries.
