2 cups Quick or Rolled Oats
1/2 teaspoon Salt
1 teaspoon Ground Cinnamon
1 cup Nut or Seed Butter (Almond, Peanut, or Sunflower)
1/4 cup Maple Syrup
1/3 cup Apple Butter
1/2 cup Mashed Banana
1/2 cup Dried Cranberries
1/2 cup Pepitas
1/2 cup Raisins
1/4 cup Ground Flaxseed


Instructions

Preheat your oven to 325°F (163°C) and line two large baking sheets with parchment paper or silicone mats.
Combine oats, salt, cinnamon, nut butter, maple syrup, apple butter, mashed banana, cranberries, pepitas, raisins, and flaxseed in a large mixing bowl.
Mix all ingredients thoroughly using a stand mixer or hand mixer until a thick, uniform dough forms.
Scoop the dough into rounded portions and place onto the prepared baking sheets.
Flatten each scoop slightly into a cookie shape.
Bake for 19 minutes or until set.
Remove from the oven and allow to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use gluten-free oats if necessary. You can substitute honey for maple syrup. Chopped dates can replace dried cranberries. Store in an airtight container for up to 5 days or freeze for up to 3 months.
