1 cup (226g) Unsalted Butter, melted and slightly cooled
2 cups (400g) Granulated Sugar
3 Large Eggs, room temperature
1 Tablespoon Pure Vanilla Extract
1 cup (82g) Unsweetened Cocoa Powder
1 cup (125g) All-Purpose Flour
1 teaspoon Salt
3/4 teaspoon Baking Powder
2 quarts Vanilla Ice Cream, slightly softened


Instructions

Preheat your oven to 350°F (177°C) and line a 9-inch square pan with parchment paper, leaving an overhang for easy removal.
Melt the butter in a microwave-safe bowl, then whisk in the sugar until the mixture is fully combined.
Whisk the eggs and vanilla into the butter mixture until smooth.
Fold the cocoa powder, flour, salt, and baking powder into the wet ingredients using a spatula until just combined.
Spread the batter into the prepared pan.
Place a sheet of parchment paper on top of the batter to help it bake perfectly flat.
Bake for 30 minutes, then remove and cool completely.
Once cooled, cut the brownies into even squares or rectangles.
Spread softened vanilla ice cream between two brownie pieces and press gently.
Freeze for at least 12 hours before serving to ensure the ice cream sets firmly.

Notes

Ensure ice cream is only slightly softened to prevent it from melting too quickly during assembly. Using parchment paper overhangs makes lifting the brownie block out of the pan much easier. If the brownies are too soft to handle, freeze the brownie slab for 30 minutes before cutting.
