Description

Pillowy-soft rolls or muffins with a golden, buttery finish. This versatile recipe delivers a rich, slightly sweet flavor and airy crumb, perfect for brunch or family gatherings.


Ingredients

1 cup warm milk
2 ¼ teaspoons active dry yeast
2 tablespoons sugar
1 large egg
4 tablespoons butter (56g)
1 teaspoon salt
3 cups all-purpose flour


Instructions

Whisk warm milk, yeast, and 1 tablespoon sugar in a stand mixer bowl. Cover and let rest 5 minutes.
Add remaining sugar, egg, butter, salt, and 1 cup flour. Attach dough hook. Mix on low speed 30 seconds. Scrape sides, then add remaining flour ½ cup at a time.
For hand mixing: Use a wooden spoon until flour dissolves. Adjust butter temperature slightly higher.
Continue mixing/kneading 5 minutes until dough passes the windowpane test. Punch down and divide into 16 equal portions.
Shape into rolls or muffins, place in greased pans, and let rise 2 hours.
Preheat oven to 350°F (175°C). Bake 25 minutes until golden and hollow-sounding.

Notes

For gluten-free option: Replace 3 cups flour with whole wheat or oat flour.
For vegan version: Substitute butter with coconut oil and use a flax egg (2 tbsp ground flaxseed + 6 tbsp water).
Optional honey butter topping: Mix 2 tbsp melted butter with 2 tbsp honey, brush over warm rolls.
