12 oz linguine or spaghetti
2 cups lobster meat (use frozen if fresh unavailable)
4 tbsp butter, melted
2 tbsp olive oil
4 cloves garlic
1 small shallot, finely chopped
1/2 tsp red pepper flakes (optional)
1/2 cup seafood stock or chicken broth
1/2 cup grated Parmesan (use nutritional yeast for substitute)
2 tbsp fresh lemon juice


Instructions

Boil salted water in a large pot and cook pasta 8 minutes or until al dente. Drain, reserving 1/2 cup starchy pasta water.
In a skillet, melt butter with olive oil over medium heat. Sauté shallot and garlic until golden (3-4 minutes). Add red pepper flakes, if using.
Pour in seafood stock and simmer 3-4 minutes to intensify flavors.
Gently fold in lobster meat until heated through, then add cooked pasta directly to the skillet. Toss to coat.
Add lemon juice and Parmesan, stirring until a creamy sauce forms. Add reserved pasta water as needed to adjust consistency.
