Instructions

Preheat oven to 350°F (175°C). Grease a 9×13-inch (23×33 cm) baking dish with non-alcoholic cooking spray containing flour.
In a bowl, whisk melted butter or coconut oil with 1¾ cups brown sugar until fully combined.
In a separate bowl, whisk 2 large eggs with 1 teaspoon vanilla extract or maple syrup, scraping the bowl to ensure no streaks remain.
Stir in 1½ cups all-purpose flour or the mixed flours until just incorporated—overmixing may result in a tough texture.
Transfer the batter to the prepared pan and spread it evenly using a spatula.
