Ingredients
1 stick (8 tablespoons) unsalted butter
1 cup heavy cream
2 tablespoons Cajun seasoning (50% paprika, 25% onion, 10% celery salt, 10% black pepper, 5% cayenne)
1 teaspoon kosher salt (omit if using salted seasoning)
1 cup fresh Parmesan cheese
1 teaspoon lemon zest
Instructions
Measure and chill the heavy cream
Melt butter in a saucepan over low heat
Whisk in heavy cream and Cajun seasoning
Simmer 3-5 minutes without boiling
Stir in Parmesan until smooth
Season with salt (if using)
Finish with lemon zest before serving over pasta
Notes
Can substitute half milk + half cream cheese for lower fat
