612 large, hard-boiled eggs
1224 medium peeled and deveined shrimp
1/4 to 1/2 cup mayonnaise
12 tbsp Dijon or yellow mustard
12 tsp lemon juice
12 tbsp Cajun seasoning
1 tbsp hot sauce
12 tbsp olive oil or melted butter
1 tbsp salt (plus extra for water)
1 tsp pepper (plus extra to taste)
1 tbsp unsweetened plant-based milk (optional)
Chopped chives and parsley (for garnish)
Paprika (for dusting)


Instructions

Add eggs to a large pot and submerge in cold water by 1 inch. Bring to a boil (about 10 minutes), then remove from heat and let sit 4 minutes. Shock in ice water bath for 5 minutes, gently crack shells, and peel under running water. Dry on paper towels.
Transfer egg yolks to a bowl (store whites in an airtight container). Coarsely mash yolks with a fork. Add 1/4 cup mayo, 1 tbsp mustard, 1 tsp lemon juice, 1 tsp Cajun seasoning, and hot sauce. Adjust to taste.
Toss shrimp with 1 tbsp Cajun seasoning. Heat oil in a skillet, add shrimp, and sauté 1 minute per side until pink. Chop chives and parsley. Fill egg whites with yolk mixture using a piping bag or spoon. Top each with 1 shrimp. Drizzle with remaining hot sauce, dust with paprika and Cajun seasoning, then chill 15 minutes before serving.

Notes

Use room-temperature eggs for flawless peeling. Test shrimp doneness by checking for an opaque center. Store unused egg whites in the fridge for up to 5 days. Adjust spiciness by adding more hot sauce.
For vegan options: Substitute mayonnaise with vegan mayo and replace egg whites with baked tofu slices.
