Ingredients

Scale

2 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground cardamom
1/2 tsp ground cloves
1/4 tsp black pepper
1 cup unsalted butter, softened
1 cup granulated sugar
3/4 cup brown sugar
4 large eggs, room temperature
2 tsp vanilla extract
1 cup buttermilk

Instructions

Preheat your oven to 350°F (175°C) and grease your baking pans.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cardamom, cloves, and black pepper.
In a large bowl, cream the softened butter with the granulated sugar and brown sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Stir in the vanilla extract.
Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the dry ingredients.
Mix just until combined; do not overmix.
Pour the batter into the prepared pans and smooth the top.
Bake for approximately 30 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Notes

Ensure all cold ingredients like eggs and buttermilk are at room temperature to prevent the batter from curdling. Use the spoon-and-level method for measuring flour to avoid a dense cake. Store in an airtight container at room temperature for up to 3 days.
