Ingredients

4 Tbsp unsalted butter
4 Tbsp all-purpose flour
2 cups whole milk
2 Tbsp Dijon mustard
1 tsp salt
Waffles
2 cups cake flour
3 tsp baking powder
1/4 tsp salt
3/4 cups whole milk
2 large eggs
2 tbsp unsalted butter (softened)
1 cup halal shredded cooked chicken
8 oz sharp cheddar cheese (grated)
3 poached eggs (served on top)
Instructions
Preheat waffle iron to desired temperature
Melt butter in a saucepan over medium-low, whisk in flour until nutty-smelling
Gradually add milk while whisking until smooth
Cook 5-7 minutes until sauce thickens; stir in Dijon mustard and salt
In a bow, combine flour, baking powder, and salt
In a separate bowl, whisk eggs, milk, and softened butter
Fold wet ingredients into dry in batches until combined (do not overmix)
Coat waffle iron with cooking spray
Spoon batter into iron half-full, top with shredded chicken
Sprinkle half the cheese over chicken, then spread 1/3-1/2 cup bechamel sauce
Add remaining cheese, egg batter, and cook until golden
Spoon remaining sauce on top of finished wafers
Bacon-free halal alternative: Omit chicken for vegetarian version
Notes
Use parchment paper under waffles to catch drips
Chill bechamel 10 minutes before spreading for better coverage
Adjust broil time based on cheese thickness
Poached eggs can be substituted with fried eggs if preferred
