A golden, gooey comfort dish combining steamed broccoli, tender chicken, and a creamy cheese sauce with rice—perfect for feeding a crowd in one pan.
Ingredients
2 cups cooked chicken, cubed or shredded
2 cups broccoli, steamed or blanched
2 cups cooked rice (white, brown, or instant)
1½ cups shredded cheese (cheddar/mozzarella mix)
1 cup sour cream or Greek yogurt
1 cup milk
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
½ cup breadcrumbs (optional)
1 tablespoon melted butter (optional for topping)
Instructions
Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
In a saucepan, melt 2 tablespoons butter. Cook flour 1–2 minutes.
Gradually whisk in 1 cup milk until smooth. Stir in garlic powder, onion powder, salt, and pepper.
Add 1 cup cheese (reserve ½ cup for topping) until melted to form a cheese sauce.
In a large bowl, mix chicken, broccoli, rice, sour cream/yogurt, and the cheese sauce.
Transfer to the prepared dish. Sprinkle reserved cheese and optional breadcrumbs mixed with 1 tablespoon melted butter.
Bake uncovered for 25–30 minutes until golden. Let rest 5 minutes before serving.
Notes
Blanch broccoli in boiling water for 3 minutes for vibrant color and crisp texture.
Use room-temperature cheese to prevent clumping.
Replace sour cream with Greek yogurt for a tangier flavor.
Optional breadcrumb topping adds crunch—if using, mix with melted butter before sprinkling.
