Ingredients
24 Ladyfinger Cookies (savoiardi)
2 cups Pitted Cherries
1/2 cup Cherry Juice
3 tbsp Non-Alcoholic Amaretto Syrup
1/2 cup Sugar
1 tsp Vanilla Extract
1.5 cups Heavy Whipping Cream
8 oz Mascarpone Cheese
Instructions
Simmer pitted cherries, 1/4 cup sugar, and 1/4 cup water in saucepan 8 minutes. Cool completely before mixing with amaretto syrup and cherry juice
Beat heavy cream, remaining sugar, and vanilla until peaks form. Gently fold in mascarpone until smooth
Dip each cookie quickly in cherry mixture (5-7 seconds). Press briefly with towel to remove excess
Layer dipped ladyfingers in square dish, spread half the cream, top with 1 cup cherries
Add remaining ladyfingers and cream, smoothing surface with spatula
Chill 6+ hours, covered with plastic wrap
Reserve 1/4 cup cherry syrup for serving
Notes
Substitute almond flour in ladyfingers for gluten-free version
Use pomegranate juice if cherry juice unavailable
Reserve extra syrup in step 1 to serve with desserts
Avoid over-soaking cookies (use kitchen towel if needed)
Chill at least 6 hours for firm layers
Dairy-free option: use vegan mascarpone and substitute 1 cup cashew cream
