Description
A non-alcoholic, halal-friendly cherry-based tiramisu with layers of mascarpone mousse, caramelized cherries, and almond depth. No coffee required—simply chill and serve.
Ingredients
2 cups pitted cherries
1/4 cup sugar
2 tbsp lemon juice
1 tsp almond extract
3 tbsp heavy cream (non-alcoholic)
1 cup espresso
24 ladyfingers
16 oz mascarpone
1 tsp vanilla extract
Instructions
Cook cherries, sugar, lemon juice, almond extract, and heavy cream in saucepan until mixture coats a spoon (150°F on thermometer). Simmer 5–7 minutes
Chill cherry mixture 30 minutes minimum
Microwave espresso 45 seconds until room temperature to soften ladyfingers
Chill a bowl in freezer 20 minutes
Whip 1 cup heavy cream with pinch of salt until stiff peaks form
In bowl, fold mascarpone with vanilla extract
Soak ladyfingers briefly in espresso solution
Layer ladyfingers with cream mixture, then spread caramelized cherry glaze
cycle layers twice
Chill full dish 4 hours before serving
Notes
Use frozen cherries thawed for 5-minute shortcut
Add 1 tbsp sugar if using sour cherries
Chilled espresso prevents sogginess
Non-alcoholic option substitutes amaretto with almond extract/cream
Can be assembled up to 24 hours ahead
