4 cups fresh sweet cherries, pitted and halved (560–660g)
6 Tablespoons unsalted butter (85g), cut into 6 pieces
1 cup all-purpose flour (125g), spoon and leveled
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk (any kind)
1 teaspoon vanilla extract
1/2 teaspoon almond extract (optional, but recommended)


Instructions

Preheat your oven to 375°F (190°C).
Place the 6 tablespoons of butter into a 10-inch cast-iron skillet.
Place the skillet in the preheated oven and let the butter melt completely, about 5-7 minutes.
While the butter is melting, prepare the cobbler topping. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.
Add the milk, vanilla extract, and almond extract (if using) to the dry ingredients. Whisk until just combined and smooth. Do not overmix.
Carefully remove the hot skillet with melted butter from the oven. Arrange the halved cherries evenly over the melted butter.
Pour the cobbler batter directly over the cherries in the skillet, spreading it gently to cover the fruit.
Return the skillet to the oven and bake for 35-40 minutes, or until the topping is golden brown and a toothpick inserted into the center of the cobbler comes out clean.
Let the cobbler cool for at least 10-15 minutes before serving, allowing the juices to thicken.
Serve warm, optionally with a scoop of vanilla ice cream or whipped cream.

Notes

If fresh cherries are not available, you can use frozen cherries (do not thaw) or drained canned sour cherries.
For a dairy-free option, use a dairy-free butter alternative and a non-dairy milk.
A gluten-free all-purpose blend can be substituted for all-purpose flour.
Serve warm, ideally with vanilla ice cream or whipped cream.
