Ingredients
Flatbread/Naan, 1 large
Basil Pesto, 1/4 to 1/2 cup
Cooked Chicken, 1-2 cups (shredded)
Mozzarella, 4-8 oz (sliced or pearls)
Tomatoes, 1 cup (halved cherry or sliced large)
Olive Oil, 1 tbsp
Balsamic Glaze, 1-2 tsp (optional)
Basil, fresh leaves (for garnish)
Instructions
Preheat oven to 400°F (200°C)
Place a baking sheet on the middle rack to preheat
Lay flatbread directly on the preheated baking sheet
Spread pesto evenly, leaving a 0.5-inch border
Layer shredded chicken over pesto
Top with mozzarella and tomatoes
Bake for 10-12 minutes until golden and crispy
Brush olive oil along edges
Garnish with fresh basil and balsamic glaze
Notes
Use pita as a gluten-free alternative if available
Add parchment paper to baking sheet for easy cleanup
Balsamic glaze can be omitted or substituted with honey if desired
