Ingredients
1 lb boneless, skinless chicken breasts or thighs, 2 medium potatoes diced small, 1 medium bell pepper chopped 1-inch, 1/2 cup chopped onion, 1 cup broccoli or zucchini florets, 2–3 tbsp olive oil, 1 tbsp minced garlic, 1 tsp Italian seasoning, 1/2 tsp salt, 1/4 tsp black pepper, 1 tbsp lemon juice
Instructions
Preheat oven to 375°F (190°C)
Divide chicken into 1-inch cubes and place in 4 heavy-duty aluminum foil sheets
Add diced potatoes, bell pepper, onion, and broccoli/zucchini to each packet
Drizzle 3/4 tbsp olive oil over each, sprinkle garlic, seasoning, salt, pepper, and 1 tsp lemon juice per packet
Seal packets by crimping edges with tongs
Bake 25–30 minutes until chicken reaches 165°F (74°C), juices run clear
Let rest 5 minutes before opening

Use halal chicken if needed
Swap potatoes with sweet potatoes or cauliflower; bell peppers with mushrooms or zucchini
Adjust spices: try chili powder, paprika, or curry powder for variation
