34 boneless chicken breasts, trimmed and halved
1 cup all-purpose flour
4 tablespoons unsalted butter, divided
8 ounces cremini mushrooms (or button mushrooms if unavailable)
68 Muenster cheese slices (can substitute with Gouda or Swiss)
1 tablespoon oil, such as olive or avocado
½ teaspoon salt
Freshly ground black pepper
Dry white grape juice (instead of sherry for alcohol-free)
1 (10.5-ounce) can cream of mushroom soup
Fresh parsley for garnish


Instructions

Pat chicken breasts dry and season with salt and pepper.
Dredge chicken in flour, shaking off excess.
Heat 2 tablespoons of butter and 1 tablespoon of oil in an oven-safe skillet over medium-high heat.
Sear chicken 3-5 minutes per side until golden brown, then transfer to a 9×13-inch baking dish.
In the same skillet, melt the remaining 2 tablespoons of butter and sauté onions for 3 minutes.
Add mushrooms to the pan and sauté until softened.
Pour in dry white grape juice and simmer for 2 minutes.
Stir in cream of mushroom soup until smooth.
Pour the sauce over the chicken and spread evenly.
Top with cheese slices, leaving ½-inch space between each slice.
Cover with foil and bake at 250°F (120°C) for 30 minutes.
Turn on the broiler and broil the dish for 1-2 minutes, or until the cheese is golden.
Allow the dish to rest for 5 minutes before garnishing with fresh parsley.

Notes

Use room-temperature butter for even melting.
